Pulled Chicken Nachos

Serves 4

Ingredients:

½ bag tortilla chips

2 chicken breasts

1 cup low-sugar BBQ sauce

¼ cup red onion, chopped

½ cup shredded cheddar

¼ cup plain Greek yogurt

3 green onions, chopped

1 jalapeno, thinly sliced

 

Directions:

  1. Prepare chicken breasts using your preferred method (baking, boiling, grilling, etc.) and shred.
  2. In a large bowl, mix chicken with BBQ sauce.
  3. On a baking sheet spread out tortilla chips in an even layer. Place BBQ chicken over the chips and sprinkle with cheese.
  4. Bake for 5-10 minutes, or until cheese is melted.
